Freedom from calories .. something mosttt of us want. And when it comes to one all-time favourite snack — Dahi-Vadas, who wouldn’t want to go calorie-free 😉
I found this recipe by Tarla Dalal when I was browsing through. Made them last weekend – Simple procedure, taste almost as good as the original ones. Also, it uses Moong Dal instead of Urad … which I think makes it a little less heavier.
What do we need?
[To makes about 8-10 vadas]
- Moong Dal – 1/2 cup
- Green chillies – 4-5
- Eno fruit salt – 1/2 tbsp
- Salt – to taste
- Asafoetida [Hing] – 1/4 tsp
- Low-fat Curd [whisked] – tempered with mustard seeds and slit green chillies
Garnishing makes it special:
- Coriander leaves – finely chopped
- Roasted cumin powder
- Chilli powder
- Khajur-Imli ki Chutney [Dates and Tamarind Chutney]
How do we go about?
Soak the Moong Dal in water for about 3-4 hours. Drain the water completely and blend well along with the green chillies, adding very little or no water. Add salt and hing to this mixture. Add the fruit salt just before you are ready to make the vadas.
The original recipe talked about using a sandwich toaster to make the vadas; instead, I used this pan below from Prestige, so that I could have them round too!
Smear the pan with oil and spread a table-spoon full of the mixture in each compartment. Cook closed on both sides till done. Now, take out the vadas and soak them in water for about 10 mins. Squeeze gently and arrange them on a plate. Pour the tempered curd over the vadas and garnish using coriander, jeera powder and chilli powder. Optionally, also add Khajur-Imli chutney. Guilt-free Dahi Vadas ready 😀

My mom uses this vessel for cooking unni-appams… which is a sweet delicacy in kerala. But yea she soaks them in oil first… thats the way to make them…

Swar dear…I don’t wish to contradict you here but even the original fried dahi wadas loose all their oil when they’re put in water…me made them the other day 😀 😀
But am sure these taste delicious…you make them for us…what say?? 😛

Varsh, I am sure most ppl think Dahi Vadas lose all their oil when u put them in water … but actually they dnt 🙂 They r enuf deep friend to retain some of it 🙂

I have tried similar methods for “Malai Kofta” .. basically for koftas … it tastes quite good … but we all know deep frying has a special taste …. but this alternate method comes quite close …and it is calorie friendly 🙂
