Chayote Squash, popularly known as Chou-Chou , Seemebadhnanekayi in Kannada and as Bangalore Vankaya here in Hyderabad is a vegetable which can be used to make many dishes including Dal, Sambhar,Curry,Chutney using its peels only if tender or Chutney using the entire vegetable. It can also be added in many other dishes like Upma, Bisibelebath etc…

Here is a chutney which is made using the vegetable as a whole.

Ingredients:

Chou Chou(roughly chopped) – 2 medium. Peel the skins if not tender.
Mustard – 2 tsp
Urad dal – 1 tbsp
Fenugreek – 6-8
Red chillies – 5-6
Curry leaves – 10-12
Tamarind – little
Hing(asafoetida) – a pinch
Salt – to taste
Oil – 1 tbsp

For tempering:

Oil – 1 tsp
Mustard – 1/2 tsp
Urad dal – 1/2 tsp

Method:

Take 1 tbsp oil in a wok. Add the mustard and as it splutters, add the urad dal. When it turns golden, add the fenugreek, with the browning of which, saute the red chillies. When they brighten, stir in the curry leaves and hing and switch off the flame. Grind this mixture along with the tamarind and salt into a fine powder[without adding water] and keep aside.

Now,take little oil in a wok and cook the Chou Chou covered till it turns tender. Now, add the vegetable to the ground mixture and grind into a coarse paste. Add the tempering and serve.
