Methi (Fenugreek) leaves chutney

This is a very simple and nutritious chutney[Methi leaves are a very rich source of iron] which tastes really good when eaten with rice and a dollop of ghee served on it.

Methi leaves(chopped) – 3 cups
Red chillies – 3-4
Green chillies – 3-4
Mustard – 1/2 tsp
Jeera – 1/2 tsp
Urad dal – 1 tbsp
Chana dal – 1 tbsp
Tamarind – little (not soaked in water)
Salt – to taste

For tempering:

Mustard – 1/2 tsp
Urad dal – 1/2 tsp

Take a wok. Add 1 tsp oil. Add the mustard. Once it splutters, add the jeera, chana dal and urad dal and fry till the aroma rises. Then add the red chillies and when they turn bright red, switch off the flame. Grind these ingredients into a fine powder in a mixer without adding any water.

Now, take the wok and saute the methi leaves by adding little oil. When they are half done, add the green chillies and tamarind and just saute for a min. Add this to the ground mixture, add little water if required and salt to taste and grind into a coarse mixture. Transfer to a serving bowl and add the mustard and urad dal tempering. Simple n yummy 🙂
